Would like to make a new template for (Irish) Griffith's Valuation records, but can't find how to start.
Any advice would be welcome.

Yes, the tutorials to focus on are the Census Grid Templates for the main grid, and the Auto Text Templates for the transcript to go into Text From Source.
BUT remember those templates can usually only produce Census Events and optionally associated attributes such as Occupation and Religion, plus Source records have their Type set to Census.
For the Griffith's Valuation records you may want to use a different Event and a different Source Type.
That is possible with some temporary tweaking of AS &/or use of the Change Any Fact Tag Plugin.

The Change Any Fact Tag Plugin can change Census/Residence facts with a specific Date to a Griffith's Valuation fact after using AS.

Thanks to you both for your replies. This is just too complex for me to attempt now. It looks as if the easiest thing would be too create a new database and use it to run the tutorial(s) - what with all the settings changes needed.

Experimenting in a temporary Project is a good idea, although you could use the Family Historian Sample Project.
However, all the customised settings only affect AS and have little impact on FH settings.
The Electoral Registers UK technique is a good model to follow.
Maybe when you have a clearer idea of the technique, post the key aspects of your Griffith's Valuation customisations.
e.g. What Fact you plan to use, and the Source Type, together with custom templates.
