We are currently using Ultimate Family Tree (UFT) and are considering migrating to HT. We have been trying out the demo version of HT version 2.1. The biggest difference against the move is the handling of events. Most events involve more than one person or one couple but HT only seems to allow linking of an event to an individual or a family. In this case the family seems to be a bit misleading as it refers to a couple only. UFT allows any number of individuals to be linked to an event each with the role taken by that individual. For example in a marriage event witness can be linked to the event and in census events all the members of the household can be linked with the role of 'head of household', 'wife', 'son', 'daughter', etc. All the individual records then link to one instance of the census record. Any changes to the details of the census record, including notes about the census, are reflected in individuals record. How do current users of HT handle events like census returns to overcome this problem. Also is it possible to show previous children of either parent along with children of consequent marriages? How are illegitimate children shown on charts we haven‘t seen any on the demo charts.
On the event query, you are correct FH only allows "GEDCOM" compliant entries. This seems to exclude events as entities in there own right.
Personally I have a source for each census page, or certificate and link people to them, but I know others use different methods.
The linking of children is very flexible as children can have multiple parent families. You can have families with no marriage record and there are intentions in the future to allow entries such as never married, but this is for a future release.
I have never used UFT so can not comment further, but hope this answers your questions in part.

I'm considering migrating from UFT as well and would welcome your experiences if you went though with it. I'm worried I may lose data as I imagine that all the fields within UFT are not GEDCOM compatible.
The project in UFT needs to be exported as a GEDCOM 5.5 file not GEDCOM event 1.1. UFT does not export research nots, flags, medical notes or roles of individuals in events so these are not transfered. On reading the resultant GEDCOM file the only tag that was rejected was the ALIA (Alias) tag. Changing these to NAME tags using a text editor solves that problem. Quality of data (QUAL) and change date (CHAN) become UDLs in FH. Census in UFT is a custom event and is transfered as such into FH. This is usable in FH or the tag can be changed from EVEN to CENS. I have migrated and think FH is a much better program.
